Ingredients:

2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup water
2 large egg whites
1 teaspoon vanilla extract
1/2 cup chopped pecans or walnuts (optional)
Pinch of salt
Directions:

Prepare Your Tools: Start by greasing a baking sheet or lining it with parchment paper to prevent the candy from sticking. If you’re adding nuts, chop them up and set them aside.

Cook Sugar Syrup: In a medium saucepan, combine the sugar, corn syrup, and water. Place the saucepan over medium heat and stir constantly until the sugar has dissolved. Bring the mixture to a boil, without stirring, and cook until it reaches the hard-ball stage (about 250°F on a candy thermometer). This usually takes about 10-15 minutes.

Beat Egg Whites: While the syrup is boiling, beat the egg whites in a large mixing bowl with a pinch of salt until stiff peaks form.

Combine Syrup with Egg Whites: Once the syrup reaches the right temperature, carefully pour it in a thin stream over the beaten egg whites, making sure to avoid the beaters. Continue to beat the mixture on high until it becomes thick, glossy, and forms soft peaks. Add in the vanilla extract and beat to combine.

Fold in Nuts (Optional): If you're using nuts, gently fold them into the mixture at this stage.

Scoop and Shape: Using a spoon or cookie scoop, drop spoonfuls of the candy mixture onto the prepared baking sheet. Let them cool and harden at room temperature for at least 1-2 hours.
