1. In a mixing bowl, use a hand mixer to blend the softened cream cheese, sour cream, garlic powder, lemon juice, salt, and pepper until the mixture is smooth and fluffy.
2. Gently fold in the shredded cheddar cheese, chopped dill pickles, and fresh dill until well combined.
3. Lay out two strips of plastic wrap in an X shape on a flat surface. Place the cheese mixture in the center, gather the edges of the wrap, and twist it to form a ball shape. Chill in the refrigerator for at least 2 hours to firm up.
4. Once chilled, spread the shredded or chopped cheddar cheese, fresh dill, and lemon zest on a flat surface. Carefully roll the cheese ball over these toppings, pressing gently to coat it evenly and cover any bare spots.
