Ingredients:
500g potatoes
300g peeled shrimp
1 medium onion
2 cloves garlic
200ml coconut cream (or almond cream for an alternative)
100ml vegetable stock
2 tablespoons olive oil
1 teaspoon cornstarch (or arrowroot)
1 teaspoon paprika
1 teaspoon thyme (or herbes de Provence)
Salt, pepper to taste
A little gluten-free breadcrumbs (optional)
Instructions:
Prepare the potatoes:
Peel and cut the potatoes into thin slices (about 3mm thick). Cook them in a pan of boiling salted water for 8-10 minutes until tender but not too soft. Drain and set aside.
