In a saucepan, bring the water, butter, salt and sugar (if using) to the boil.
Remove from the heat and add the flour all at once. Mix vigorously with a wooden spoon until you obtain a smooth dough.
Let the dough cool for a few minutes, then transfer it to a piping bag with a star tip.
2. Cook the churros:
Heat the oil in a deep fryer or large saucepan (about 180°C).
Squeeze the piping bag to form sticks of dough (of the desired length) directly into the hot oil. Cut the dough with scissors if necessary.
Fry the churros until golden brown, then drain on paper towels.
Roll them in sugar or brown sugar while they are still warm.
3. Prepare the chocolate sauce:
Heat the single cream in a small saucepan until simmering.
Remove from the heat and add the chocolate pieces. Mix until smooth.
Add the honey (or sugar) and a pinch of salt to balance the flavors.
4. Assemble:
Place the churros on sticks for an original serving.
Pour the chocolate sauce into small glasses or ramekins.
Serve immediately, dipping the churros in the sauce.
