1. **Prepare the peppers**
Preheat the oven to 200°C. Cut a hole in the side of each pepper and carefully remove the seeds and membranes. Brush with olive oil and place on a baking sheet. Bake for 10 minutes to soften slightly.
2. **Prepare the stuffing**
In a frying pan, heat the olive oil and sauté the onion until translucent. Add the garlic, minced meat, cumin, paprika, salt and pepper. Cook until the meat is nicely browned. Stir in the grated cheese off the heat to melt slightly.
3. **Stuff the peppers**
Fill each pepper with the cheese stuffing (and meat if using).
4. **Prepare the cheese sauce**
In a saucepan, heat the crème fraîche over low heat. Add the grated cheese and stir until completely melted. Stir in mustard and cayenne pepper, then season to taste.
5. **Bake the stuffed peppers**
Arrange the stuffed peppers in a baking dish. Pour the cheese sauce over them and bake for 15 minutes, until heated through and lightly browned.
### Tips:
1. For a vegetarian version, substitute black beans or corn for the meat.
2. Add a little fresh chili pepper or jalapeños for a spicier dish.
