Directions:
1. Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions.
2. Mix Dry Ingredients: In a large bowl, whisk together the flour, cornstarch, baking powder, baking soda, salt, and granulated sugar.
3. Prepare Wet Ingredients: In another bowl, whisk the egg yolks, buttermilk, oil or melted butter, and vanilla extract until well combined.
4. Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined. It's okay if there are a few lumps—don't overmix!
5. Beat Egg Whites: In a clean bowl, beat the egg whites with the cream of tartar until stiff peaks form.
6. Fold in Egg Whites: Carefully fold the beaten egg whites into the batter, taking care not to deflate them.
7. Cook Waffles: Lightly grease the waffle iron with non-stick spray or a bit of melted butter. Pour in enough batter to cover the surface without overflowing. Close the lid and cook according to the manufacturer's instructions, usually for about 3-5 minutes, until the waffles are golden brown and crispy on the edges.
8. Serve: Serve the waffles immediately or keep them warm in a 200°F (93°C) oven until ready to enjoy. Top with your favorite toppings such as maple syrup, fresh berries, whipped cream, or powdered sugar.
