Garlic Shrimp with Coconut Milk😋
Ingredients (serves 4):
* 450g large shrimp, peeled and deveined
* 4 cloves garlic, minced
* 1 can (400ml) coconut milk
* 2 tbsp olive oil or coconut oil
* 1 medium onion, finely chopped
* 1 red pepper, thinly sliced
* 1 tbsp fresh ginger, grated
* 1 tsp paprika (optional)
* 1 tsp turmeric (optional)
* 1 tbsp soy sauce or fish sauce (optional, for extra flavour)
* Juice of 1 lime
* Salt and pepper to taste
* Fresh coriander or parsley, chopped (for garnish)
* Cooked rice or noodles (for serving)
