Instructions
Prepare the courgettes:
Preheat the oven to 200°C (392°F).
Wash and grate the courgettes using the large holes of a box grater. Sprinkle a little salt over the grated courgettes, mix and set aside in a colander to drain off any excess moisture.
Make the egg mixture:
In a bowl, beat the 5 eggs.
Add 5 tablespoons of parmesan.
Add chopped parsley and mix well.
There is no need to add extra salt as the parmesan is salty.
Combine the ingredients:
After letting the courgettes sit for a while, squeeze out any excess liquid.
Add the grated courgettes to the egg mixture and mix well.
Bake the courgette roll:
Take a 30 x 40cm baking tray and line it with baking paper.
Lightly coat the baking paper with extra virgin olive oil.
Pour the mixture onto the prepared tray and spread it evenly using a spatula.
Bake in preheated oven for 25 minutes, or until firm and lightly browned.
Cool and prepare filling:
Remove from oven and let cool for 15 minutes. Place a layer of plastic wrap on a flat surface and place the baked zucchini layer on top.
Spread the cream cheese evenly over the zucchini layer.

Roll up and chill:
Carefully roll up the courgette layer using cling film to keep it tight.
Twist the ends of the cling film to seal the roll tightly.
Place in the fridge and leave to rest for 2 hours.
