In a large bowl, combine the flour, salt, and yeast.
Slowly add the warm water, stirring until a shaggy dough forms.
Cover the bowl with plastic wrap and let it sit at room temperature for 12 to 18 hours.
Preheat your oven to 450°F (230°C). Place a Dutch oven or heavy pot with a lid in the oven to heat up.
Turn the dough out onto a floured surface and shape it into a ball.
Carefully remove the hot pot from the oven and place the dough inside.
Cover with the lid and bake for 30 minutes.
Remove the lid and bake for an additional 10 to 15 minutes, until the bread is golden and crusty.
Let the bread cool on a wire rack before slicing.
Variations & Tips
For a little extra flavor, try adding a tablespoon of honey or a few cloves of minced garlic to the dough. You can also mix in some herbs like rosemary or thyme for an aromatic twist. If you have picky eaters, consider making smaller rolls instead of a single loaf, which can be more fun for kids to eat. For a whole wheat version, substitute half of the all-purpose flour with whole wheat flour.
