1. Preheat your smoker or oven to 250°F (120°C).
2. Remove the membrane from the ribs (if using wings, this step can be skipped) and cut into individual pieces.
3. Season generously with the rub.
4. Place the ribs (or wings) on the smoker for around 90 minutes at 250°F, aiming for an internal temperature of 165°F.
5. While the ribs/wings are smoking, prepare the teriyaki sauce. In a saucepan, combine soy sauce, brown sugar, mirin, honey, and rice vinegar. Warm on low until the sugar is dissolved.
6. Add minced garlic and ginger to the sauce. Bring to a low simmer for a few minutes, then add the corn starch slurry. Stir well and remove from heat.
7. Add sesame oil to the sauce, stir, and allow it to thicken.
8. Transfer the ribs/wings to an aluminum pan and pour the teriyaki sauce over them.
9. Sprinkle additional brown sugar on top, drizzle with honey, and add pats of butter.
10. Cover with foil and place back on the smoker (or in the oven) until the internal temperature reaches 205°F, approximately 90 more minutes.
11. Once finished, move the ribs/wings around in the pan to coat them nicely with the sauce.
12. Sprinkle with sesame seeds if desired and enjoy!
