Preheat Oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare Spinach Mixture: In a pan over medium heat, heat olive oil and sauté minced garlic for about 2 minutes. Add spinach, season with salt and pepper, and cook until wilted. Remove from heat and let cool.
Prepare Puff Pastry: Roll out puff pastry and cut into 6 large squares or 12 smaller squares. Arrange on the prepared baking sheet.
Make Filling: In a bowl, mix the cooled spinach mixture with cream cheese, shredded mozzarella, egg, salt, and pepper until combined.
Assemble Puffs: Place a portion of filling in the center of each puff pastry square. Fold two opposite corners toward the center to form a packet.
Brush and Bake: Beat egg yolk and brush over each pastry for a golden finish. Bake for 15-20 minutes, until golden and crispy.
Cool and Serve: Allow to cool slightly before serving. Enjoy warm or at room temperature.
