Sauté Aromatics:
Heat olive oil in a medium saucepan over medium heat.
Add onion and sauté for 3-4 minutes until softened.
Add garlic and sauté for 30 seconds until fragrant.
Toast the Rice:
Add uncooked rice to the pan, stirring to coat with oil.
Toast for 1-2 minutes to enhance flavor.
Add Broth and Seasonings:
Pour in broth, salt, pepper, oregano, lemon zest, and half the lemon juice.
Bring to a boil.
Cook the Rice:
Reduce heat to low, cover, and simmer for 15-18 minutes or until liquid is absorbed.
Fluff and Add Lemon Juice:
Remove from heat, let sit for 5 minutes, then fluff with a fork.
Add remaining lemon juice and stir.
Garnish and Serve:
Transfer to a serving dish, garnish with parsley, and serve warm.
