Step 1: Prepare the Taco Shells
Preheat the Oven: Preheat your oven to 350°F (175°C).
Coat the Tortillas: Brush both sides of each tortilla with melted butter. Then, sprinkle the cinnamon-sugar mixture evenly over both sides of the tortillas.
Bake the Shells: Drape the tortillas over two bars of your oven rack to form a taco shell shape. Bake for about 8-10 minutes, or until they are golden brown and crispy. Keep an eye on them to prevent burning. Once done, remove the shells from the oven and let them cool completely.
Step 2: Prepare the Filling
Prepare the Fruit: While the taco shells are cooling, dice the strawberries, mango, kiwi, and pineapple. Combine all the diced fruit with the blueberries in a mixing bowl.
Sweeten the Filling (Optional): If you prefer a sweeter filling, drizzle the fruit with honey or maple syrup and toss gently to combine.
Step 3: Assemble the Tacos
Fill the Shells: Once the taco shells are cool and crispy, fill each shell with a generous spoonful of Greek yogurt or whipped cream.
Add the Fruit: Spoon the mixed fruit into each taco shell, on top of the yogurt or whipped cream.
Step 4: Add Optional Toppings
Garnish: Sprinkle the tacos with shredded coconut for a tropical touch, add a bit of lime zest for a zingy flavor, and garnish with fresh mint leaves for a pop of color and freshness.
Step 5: Serve
Enjoy: Serve the fruit tacos immediately to enjoy the contrast of the crunchy shells and the fresh, juicy fruit
