1. Prepare the apples by peeling them, then remove the heart and dice them. Grate the zest of the orange and lemon, then squeeze them to extract the juice. Place the cubed apples in a large saucepan and add the zest and juice of orange and lemon.
2. In the casserole containing apples, incorporate the crystallized sugar along with the spices: cinnamon, ginger, nutmeg, cloves, cinnamon stick and cut in half a vanilla bean sprout. Mix it all and let it marinate for an hour so that the fruits absorb the flavors.
3. Place the skillet over medium heat and bring the mixture to a boil. Next, reduce the heat and let it simmer gently for about 45 minutes, stirring regularly. Your jam needs to thicken and the apples become tender. Don't forget to remove the cloves, vanilla goose and cinnamon stick after baking.
4. Pour your hot jam in pre-sterilized jars. Close them airtight and flip them over to create a vacuum. Let cool completely before storing them in a cool place.
5. This jam can be preserved for several months and is perfect to make your family breakfasts even more joyful, or to give as a gourmet gift.
