Chocolate Creme Brulee is a gourmet variation of the classic creme brulee, combining the creamy texture of cream with the rich flavor of chocolate. This recipe is simple to make and guarantees a refined and delicious dessert, perfect for a sweet end to a meal.

200 ml of whole liquid cream πŸ₯›
100 ml of whole milk πŸ₯›
100 g of dark chocolate (at least 70% cocoa) 🍫

Preheat the oven:
Preheat your oven to 150Β°C (300Β°F). Prepare a large baking dish and 4 ramekins.
Heat the cream and milk:
In a saucepan, heat the liquid cream and milk over low heat. As soon as the mixture begins to simmer, remove from the heat.
Add the chocolate:
Add the dark chocolate broken into pieces to the hot cream. Stir until the chocolate is completely melted and the mixture is smooth. Let cool slightly.
Prepare the eggs and sugar:
In a bowl, whisk the egg yolks with the powdered sugar until the mixture whitens and becomes frothy. Add the vanilla extract if using.
Mix the cream and eggs:
Gradually pour the cream and chocolate mixture over the egg yolks, whisking constantly to prevent the eggs from cooking. Mix until you obtain a smooth cream.
Pour into the ramekins:
Divide the mixture into the ramekins. Place the ramekins in the large baking dish, then pour hot water into the dish, up to halfway up the ramekins (bain-marie).
Cook the crème brulee:
Bake for about 30 to 35 minutes, until the custard is set but still slightly wobbly in the center. Let cool completely at room temperature, then refrigerate for at least 2 hours (or overnight for best results).
Caramelize the top:
Just before serving, sprinkle each ramekin with a thin layer of brown sugar. Use a kitchen blowtorch to caramelize the sugar until you get a nice golden and crispy crust. If you don't have a blowtorch, you can place the ramekins under the very hot grill of your oven for a few minutes (watch carefully to avoid burning the sugar).
Serving:
Let cool for a few moments before serving, so that the caramelized crust hardens. The Chocolate Creme Brulee is best enjoyed cold with a warm and crunchy crust.
