Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the egg whites and vanilla extract until frothy.
Add the mixed nuts to the egg whites and stir until they are evenly coated.
In another bowl, combine the sugar, cinnamon, salt, and nutmeg.
Sprinkle the sugar mixture over the nut mixture, stirring to coat the nuts evenly.
Spread the coated nuts in a single layer on the prepared baking sheet.
Bake in the preheated oven for about 35-40 minutes, stirring every 10 minutes, until the nuts are crisp and golden. Keep an eye on them towards the end to prevent burning.
Allow the nuts to cool completely on the baking sheet before breaking them apart and storing in an airtight container.
Variations & Tips
If you have a sweet tooth, try adding a touch of maple syrup to the egg white mixture for an extra depth of flavor. For those who like a bit of heat, a pinch of cayenne pepper can add an exciting twist. To accommodate different dietary preferences, you can use only one type of nut or substitute with seeds like sunflower or pumpkin. For a more festive flair, add dried cranberries or bits of candied ginger once the nuts have cooled.
