Vegan Jamaican Sweet Potato Pudding

Ingredients:
2 cups sweet potatoes, peeled and cubed
1 cup coconut milk (or any plant-based milk)
1/2 cup brown sugar (or maple syrup)
1/2 cup all-purpose flour (or gluten-free flour)
1/4 cup cornmeal
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup raisins (optional)
1/4 cup shredded coconut (optional)
Instructions:
Step 1: Prepare the Sweet Potatoes
Boil Sweet Potatoes: In a pot, boil the sweet potatoes in water until tender, about 15-20 minutes. Drain and let cool slightly.
Mash Sweet Potatoes: Once cooled, mash the sweet potatoes in a large bowl until smooth.
