Preheat your oven to 350°F (175°C).
In a blender or food processor, combine the silken tofu, coconut cream, pudding mix, vanilla extract, maple syrup, and lemon juice. Blend until smooth and creamy.
Pour the mixture into a 9-inch pie dish or springform pan.
Bake for about 30 minutes, or until the edges are set and the center is slightly jiggly.
Let it cool for a couple of hours in the fridge before serving.
