Lemon Meringue Rice Krispie Treats
Servings: 12
Ingredients
3 tablespoons butter
1 package (10 oz) mini marshmallows
6 cups Rice Krispies cereal
1 tablespoon lemon zest
1/2 cup lemon curd
3 large egg whites
1/4 teaspoon cream of tartar
1/2 cup granulated sugar
Directions
Grease a 9x13-inch pan with butter or non-stick spray.
In a large pot, melt the butter over low heat. Once melted, add the mini marshmallows and stir until completely melted and smooth.
Remove the pot from heat and stir in the lemon zest and lemon curd until well combined.
Add the Rice Krispies cereal to the pot and gently fold until the cereal is evenly coated with the marshmallow mixture.
