This is one of the most delicious side dishes I have made

Prepare the Carrots: Peel and slice carrots into 1/4 inch thick rounds. Cook in boiling water for 5-7 minutes, or until tender. Drain.
Make the Glaze: Melt butter in a skillet over medium heat. Add brown sugar and stir until smooth. Season with salt and pepper. Add optional ingredients (cinnamon, nutmeg, orange juice) if desired.
Glaze the Carrots: Add cooked carrots to the skillet with the glaze. Toss to coat. Cook for 2-3 minutes, or until glaze thickens.
Serve: Serve warm as a side dish.
