Stuffed Pepper Casserole

Ingredients:

– 1 pound ground beef (or ground turkey)
– 1 cup uncooked rice (white or brown)
– 1 can (15 oz) diced tomatoes, undrained
– 1 cup bell peppers, chopped (any color)
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 2 cups beef broth (or vegetable broth)
– 1 teaspoon Italian seasoning
– 1 teaspoon paprika
– Salt and pepper to taste
– 1 cup shredded cheese (cheddar or mozzarella)
– Fresh parsley for garnish (optional)

Instructions:

1. Preheat the Oven:

– Preheat your oven to 350°F (175°C).

2. Cook the Meat:

– In a large skillet over medium heat, brown the ground beef (or turkey) until fully cooked.

Drain any excess fat.

3. Sauté the Vegetables:

– Add the chopped onion and minced garlic to the skillet with the meat.

Sauté for about 3-4 minutes until the onion is translucent.
– Stir in the chopped bell peppers and cook for another 2-3 minutes.
