Instructions:
Preheat the Oven
Preheat your oven to 350 degrees.
Lemon Filling
In a medium saucepan, whisk together 1 cup of white sugar, 2 tablespoons of all-purpose flour, 3 tablespoons of cornstarch, and 1/4 teaspoon of salt.
Stir in 1 1/2 cups of water, the juice and zest of 2 lemons, and 2 tablespoons of butter.
Cook the mixture over medium-high heat, stirring frequently until it comes to a boil.
Place 4 beaten egg yolks in a small bowl and gradually whisk in 1/2 cup of the hot sugar mixture.
Whisk the egg yolk mixture back into the remaining sugar mixture. Bring it to a boil, continuing to stir constantly until the mixture thickens. Remove it from heat.
Pour the lemon filling into the baked pastry shell.
Meringue
In a large glass or metal bowl, whip 4 egg whites until they become foamy.
Gradually add 6 tablespoons of white sugar while continuing to whip until stiff peaks form.
Spread the meringue over the pie, making sure to seal the edges at the crust.
Bake in the preheated oven for 10 minutes, or until the meringue is a beautiful golden brown.
