Mexican Green Aguachiles 🍤🌿

Butterfly the shrimp:

Slice the peeled shrimp in half lengthwise to butterfly them, allowing the citrus juice to "cook" them more quickly.
Marinate the shrimp:

In a bowl, combine the shrimp with the lime and lemon juice. Add a pinch of salt and stir to coat the shrimp evenly. Let the shrimp marinate in the fridge for 15-20 minutes, or until they turn pink and opaque.
Prepare the Green Sauce:
Blend the sauce:
In a blender, combine the lime juice, water, serrano peppers, garlic, fresh cilantro, and a pinch of salt. Blend until smooth. Taste and adjust the salt and heat as needed.
Assemble the Aguachiles:
Combine shrimp and vegetables:

Once the shrimp are "cooked" in the citrus juice, add the thinly sliced cucumber, red onion, and some chopped cilantro. Stir to combine.
Add the green sauce:

Pour the blended green sauce over the shrimp and vegetables. Toss gently to coat everything in the sauce.
Chill and marinate:

Let the Aguachiles marinate in the fridge for another 10-15 minutes to allow the flavors to develop.
Serve:
Garnish and serve:
Serve the Aguachiles cold with sliced avocado on top for extra creaminess. Garnish with additional cilantro and serve with tostadas or tortilla chips for dipping.
