Make Ahead Breakfast Sandwich Recipe
Ingredients
12 English muffins
12 slices of cooked bacon, sausage patties, ham, or Canadian bacon
12 slices of cheddar cheese or your preferred cheese
12 eggs
2 tablespoons of milk
Salt and pepper to taste
Instructions
1. Preheat oven to 325°F (163°C) and grease a 9x13" pan.
2. Whisk eggs, milk, salt, and pepper; pour into pan. Bake 18-22 mins.
3. Cool, then cut into 12 squares.
4. Assemble: Egg, cheese, meat between English muffin halves.
For immediate consumption, bake at 350°F (177°C) until cheese melts.
To freeze, wrap each sandwich, store in freezer-safe bag for up to 1-2 months.
To reheat, thaw in fridge, then microwave wrapped sandwich on defrost for 40 sec - 1 min, flip, microwave 10-30 sec; or bake at 350°F (177°C) for 10-15 mins or use toaster oven.
