4 chicken breasts (6-8 oz each)
1/2 each of red, yellow, and green bell pepper, sliced thinly
1/2 small red onion, sliced thinly
1 cup shredded Monterey Jack cheese
Cilantro, for garnish (optional)
Sour cream, for serving (optional)
For the chili lime rub:
1/4 cup olive oil
3 tablespoons lime juice
Zest of 1 lime
2 teaspoons honey
2 teaspoons chili powder
1 1/2 teaspoons salt
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1/4-1/2 teaspoon chipotle chili powder (optional for heat)
1/2 teaspoon pepper
