Creamy roasted red pepper pasta
Ingredients
For the roasted red pepper sauce:
2 large red bell peppers
1 tablespoon olive oil
2 cloves garlic, minced
1/2 cup raw cashews (soaked in water for at least 2 hours)
1 cup vegetable broth
1 tablespoon nutritional yeast (optional)
1 teaspoon lemon juice
Salt and pepper to taste
For the pasta:
12 oz pasta of your choice (like penne or fettuccine)
Fresh basil (for garnish)
Red pepper flakes (optional, for heat)
