Ingredients:
1 medium Cauliflower (about 700g), cut into florets
2 cloves of Garlic, minced
1 tbsp Salt
3 tbsp Olive Oil
1 tsp Vegetable Oil
1 Onion, chopped
1 Red Bell Pepper, diced
1 Green Pepper, diced
1 large Carrot, diced
300 g Minced Meat (your choice of beef, pork, or a mix)
1/2 tsp Black Pepper
1 tsp Paprika
2 tbsp Tomato Sauce
100 g Cheddar Cheese, grated
100 g Mozzarella Cheese, grated
Instructions:
Preheat Oven and Prepare Cauliflower:
Preheat Oven: Preheat your oven to 200°C (390°F).
Blanch Cauliflower: In a large pot, bring water to a boil and add 1 tbsp of salt. Blanch the cauliflower florets for about 5 minutes until they are slightly tender but still crisp. Drain and set aside.
Cook the Vegetables and Meat:
Heat Oil: In a large skillet, heat the olive oil and vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onions become translucent.
Cook Vegetables: Add the diced red bell pepper, green pepper, and carrot to the skillet. Cook for another 5-7 minutes until the vegetables start to soften.
Add Minced Meat: Increase the heat to medium-high and add the minced meat to the skillet. Break the meat apart with a spoon, cooking until browned and cooked through.
Season: Season the meat mixture with black pepper, paprika, and stir in the tomato sauce. Cook for an additional 2 minutes to combine the flavors. Remove from heat.
