Ingredients
4 large flour tortillas
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
1 cup cooked and shredded chicken (optional)
1/2 cup black beans, drained and rinsed
1/2 cup corn kernels (fresh, canned, or frozen)
1/4 cup diced green chilies
1/4 cup chopped fresh cilantro
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper, to taste
1/4 cup melted butter
Salsa, for serving
Sour cream, for serving
Guacamole, for serving
Instructions
Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
Prepare the Filling:
In a large bowl, combine the shredded cheddar and Monterey Jack cheeses, cooked chicken (if using), black beans, corn, diced green chilies, chopped cilantro, ground cumin, chili powder, salt, and pepper. Mix well to evenly distribute the ingredients.
