1 lb (450g) dried beans (such as navy beans, cannellini, or great northern beans), soaked overnight or quick-soaked
1 large onion, chopped
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 bay leaf
1 tsp dried thyme (or fresh sprigs)
1/2 tsp black pepper
6-8 cups chicken broth (or water)
1-2 tbsp olive oil (for sautéing)
