1. Preheat your oven to 375°F (190°C).
2. Lay out the tortilla wraps on a clean surface.
3. Spread the baked beans evenly on half the tortilla.
4. Arrange slices of sausage on top of the baked beans.
5. Sprinkle a generous amount of cheddar cheese over the sausage.
6. Carefully fold the tortillas in half over the filling, pressing gently to seal. Optional: Beat 1 egg for egg wash that is to be brushed over these pockets.
7. Place the tortilla wraps on a baking sheet and bake in the preheated oven for about 10-15 minutes, or until the tortillas are crisp and golden and the cheese has melted.
8. Remove from the oven, let cool slightly, and then cut each tortilla into wedges.
9. Serve warm.
For those who like a bit of heat, adding a dash of hot sauce or diced jalapenos into the beans gives a nice kick. If you’re not a fan of cheddar, try mozzarella or a smoked gouda for a different flavor twist.
