Prepare the Salmon:
Season the salmon fillets with salt, pepper, and a sprinkle of Italian seasoning on both sides.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Place the salmon fillets in the skillet and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove the salmon from the skillet and set aside.
Make the Tuscan Sauce:
In the same skillet, lower the heat to medium and add the remaining tablespoon of olive oil. Sauté the minced garlic for about 30 seconds, until fragrant.
Add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Stir in the baby spinach and cook until wilted.
Pour in the heavy cream and stir in the Parmesan cheese, red pepper flakes (if using), and additional Italian seasoning. Let the sauce simmer for 2-3 minutes until slightly thickened.
Combine and Serve:
Return the cooked salmon fillets to the skillet, spooning the creamy Tuscan sauce over the salmon. Allow it to simmer for another 2-3 minutes so the flavors meld together.
Garnish with freshly chopped parsley and serve with lemon wedges on the side.
