Cut each mozzarella string cheese stick in half, making a total of 16 pieces.
Set up a breading station with three shallow bowls. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, combine the bread crumbs, Parmesan cheese, garlic powder, dried oregano, salt, and pepper.
Take a piece of cheese and roll it in the flour until it's well coated. Dip it into the beaten eggs, then roll it in the bread crumb mixture, pressing gently to adhere. For an extra-crispy coating, repeat the egg and bread crumb steps. Repeat with the remaining cheese pieces.
Place the coated cheese sticks on a baking sheet and freeze for at least 1 hour. This helps the coating stick to the cheese when frying.
Heat about 2 inches of vegetable oil in a deep pot over medium-high heat. Once the oil reaches 350°F (175°C), fry the mozzarella sticks in batches, about 1-2 minutes per side, until golden brown and crispy.
Transfer the fried cheese sticks to a paper towel-lined plate to drain any excess oil.
Serve immediately with your favorite dipping sauce.
