Overnight Crème Brûlée French Toast

Generously butter a 9×13-inch baking dish. Arrange the bread slices in a snug, single layer.
In a large mixing bowl, whisk together 5 eggs, 1 cup half-and-half, 1 cup whole milk, 1 teaspoon vanilla extract, 2/3 cup granulated sugar, 1/4 teaspoon cinnamon, and 1/4 teaspoon nutmeg until smooth.
Evenly pour the custard mixture over the bread slices, ensuring all pieces are soaked. Cover with plastic wrap and refrigerate overnight.
Preheat the oven to 350°F (175°C). Remove the baking dish from the refrigerator and take off the plastic wrap.
Scatter the small pieces of 1/4 cup unsalted butter over the top of the soaked bread. Sprinkle a bit more granulated sugar over the top.
Bake in the preheated oven for 35-40 minutes, or until the bread is puffed and golden.
Optional: Sprinkle additional granulated sugar on top and broil for a few minutes until the sugar caramelizes.
Serve the French toast warm with maple syrup on the side.
