Fast and easy way for a quick dinner! The kids gobbled it up and we still had enough leftovers for lunch

Cook Pasta: Bring a large pot of salted water to a boil. Cook pasta shells according to package directions. Drain and set aside, reserving 1/2 cup of pasta water.
Cook Ground Beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned and fully cooked. Drain excess fat.
Sauté Vegetables: Add chopped onion and minced garlic to the skillet. Sauté until onion is soft and translucent, and garlic is fragrant.
Add Tomatoes and Seasonings: Stir in tomato sauce, diced tomatoes, Italian seasoning, paprika, garlic powder, red pepper flakes (if using), salt, and pepper. Simmer for 10-15 minutes.
Combine Pasta and Sauce: Add cooked pasta shells to the skillet with the ground beef sauce. Toss to coat evenly. If sauce is too thick, add some reserved pasta water.
Add Cheese (Optional): Sprinkle with shredded cheese and cover and cook on low heat for 2-3 minutes, or until cheese is melted and bubbly.
Serve: Garnish with fresh parsley or basil and serve hot.
