Back when my mom whipped this up on hectic days, it vanished in seconds!

1. Preheat your oven to 375°F (190°C).
2. In a small bowl, whisk together the honey, minced garlic, soy sauce, olive oil, and apple cider vinegar. If you want to add a bit more depth, mix in the thyme and oregano as well.
3. Season the pork tenderloin with salt and pepper on all sides.
4. Heat a large oven-safe skillet over medium-high heat. Add a little olive oil, then sear the pork tenderloin on all sides until it's browned, about 2-3 minutes per side.
5. Pour the honey garlic mixture over the pork tenderloin, making sure it gets coated evenly.
6. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
7. Once done, remove the skillet from the oven. Let the pork rest for about 5 minutes before slicing.
8. Drizzle some of the pan juices over the sliced pork before serving. Enjoy!
