Prepare Soup Base:
Put veggie broth in the kettle and cook. Cook broccoli for 8-10 minutes until soft.
Make Roux:
Create a slurry by gently whisking together milk and flour in a small bowl. Continue swirling while gently pouring the slurry into the cooking soup.
Thicken Soup:
Keep simmering the soup for an additional 5-7 minutes, or until it starts to thicken.
Add Cheese:
Reduce the heat and slowly stir in the shredded cheddar cheese until it melts and combines with the soup. Season with salt, pepper, and a touch of nutmeg, if desired. Feel free to alter the seasoning to your taste.
Blend (Optional):
To have a smoother consistency, use an immersion blender to mix the soup until it is creamy. As an alternative, you can transfer portion of the soup to a blender and puree until smooth. Then, you can return it to the pot.
Serve:
Serve the 30 Minute Broccoli Cheddar Soup in bowls. Enjoy your meal while it’s still hot!
