Ingredients:

2 medium eggplants
1 onion, finely chopped
2 cloves garlic, minced
Salt and pepper to taste
Parsley, chopped
3 eggs
125 ml yogurt
20 ml olive oil (plus some for sautéing)
150 ml water
250 grams all-purpose flour
10 grams instant yeast
125 grams mozzarella cheese, grated
Olive oil, for cooking
