Ingredients
For the Mousse:
15 oz (3.5 cups) fresh raspberries
2 tsp gelatin powder
3 tbsp (45 ml) cold water
1 1/2 cups (355 ml) heavy cream
12 oz (340 g) cream cheese, softened
2 1/4 cups (260 g) powdered sugar, divided
1 tsp vanilla extract
Red food coloring (optional)
For the Crust:
1 cup (120 g) graham cracker crumbs (about 8 full sheets)
2 tbsp (26 g) granulated sugar
1/4 cup (56 g) unsalted butter, melted
Optional Topping:
3/4 cup (175 ml) heavy cream
2 tbsp (26 g) granulated sugar
10 - 20 fresh raspberries
Mint leaves for garnish
