4 boneless, skinless chicken breasts
Salt and pepper to taste
1 tablespoon olive oil
2 cups grape tomatoes, halved
3 cloves garlic, minced
1/4 cup balsamic vinegar
1 teaspoon dried oregano
1 teaspoon dried basil
1 cup shredded mozzarella cheese
1/2 cup fresh basil leaves, chopped
Extra basil leaves for garnish
Directions
1. Preheat your oven to 375 degrees F (190 degrees C).
2. Season the chicken breasts with salt and pepper.
3. Heat olive oil in a large skillet over medium heat. Add the chicken and sear until golden, about 3-4 minutes on each side.
4. Transfer the chicken to a greased baking dish.
5. In the same skillet, add the garlic and sauté for about 1 minute until fragrant.
6. Add the tomatoes, balsamic vinegar, oregano, and dried basil. Sauté for about 5 minutes until the tomatoes are just beginning to break down.
7. Pour the tomato mixture over the chicken in the baking dish. Sprinkle with shredded mozzarella cheese.
8. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
9. Remove from oven and top with fresh chopped basil and additional basil leaves for garnish.
Variations & Tips
For a cheesy twist, sprinkle some Parmesan along with the mozzarella before baking. If you’re a fan of spice, add a pinch of red pepper flakes to the tomato mixture. For those with dietary restrictions, you can substitute the chicken with thick slices of eggplant to make a vegetarian version that is just as delicious.
