Instructions:
1. Prepare the Lemon Jello Layer:
Mix Jello and Gelatin: In a mixing bowl, combine the lemon jello and 1 1/4 teaspoons plain gelatin.
Dissolve: Add 1 cup boiling water to the mixture, stirring until completely dissolved.
Cool and Pour: Allow the mixture to cool slightly before pouring it into individual cups. Let the cups chill in the fridge until the jello layer is set (about 1-2 hours).
2. Prepare the Creamy Layer:
Combine Sweetened Condensed Milk and Water: In a mixing bowl, combine the sweetened condensed milk with 1 cup boiling water, stirring until well combined.
Bloom the Gelatin: In a separate small bowl, mix 1/2 cup cold water with 2 packets plain gelatin. Stir and let it sit for 2-3 minutes to bloom.
Incorporate Gelatin: Add the bloomed gelatin mixture to the sweetened condensed milk mixture, stirring until combined.
3. Layering:
Add Cream Layer: Once the jello layer is fully set, pour a layer of the creamy mixture over the jello. You can adjust the thickness of the creamy layer to your preference. Note that you will have leftover cream mixture.
Chill: Return the cups to the fridge to let the creamy layer set (about 1-2 hours).
4. Repeat Layers:
Add More Jello and Cream Layers: After the creamy layer is set, add another layer of jello, followed by a creamy layer. Repeat this process, alternating layers until the cups are filled.
Warm Up Cream Mixture: If the creamy mixture starts to set while waiting, gently warm it over low heat until it becomes liquid again.
5. Finish and Serve:
Top (Optional): Once all layers are set, top each jello cup with a dollop of Cool Whip or whipped cream and a lemon slice, if desired.
