Lava Mini Chiffon Cake Recipe

1. Prepare the Custard Filling:

In a medium saucepan, heat the milk over medium heat until it starts to simmer.

In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until smooth.

Gradually add the hot milk to the egg mixture, whisking constantly.

Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens.

Remove from heat and stir in vanilla extract and butter.

Pour the custard into a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin from forming), and refrigerate until completely cooled.

2. Prepare the Chiffon Cake Batter:

Preheat your oven to 325°F (165°C) and line a mini muffin tin with paper liners.

In a large mixing bowl, whisk together the egg yolks, 1/4 cup of sugar, vegetable oil, water, and vanilla extract until well combined.

Sift the cake flour, baking powder, and salt into the egg yolk mixture and mix until smooth.

In a separate bowl, beat the egg whites and cream of tartar on medium speed until frothy. Gradually add the remaining 1/4 cup of sugar and beat on high speed until stiff peaks form.

Gently fold the egg whites into the egg yolk mixture in three additions, being careful not to deflate the batter.

3. Assemble and Bake:

Fill each muffin cup about 1/3 full with the chiffon cake batter.

Add a teaspoon of the cooled custard filling to the center of each muffin cup.

Cover the custard with more chiffon cake batter, filling each cup about 3/4 full.

Bake for 15-18 minutes, or until the tops are lightly golden and a toothpick inserted into the edge of the cake comes out clean.

Allow the cakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

4. Serve:

Once cooled, these mini chiffon cakes are ready to be served. The creamy custard center will provide a delightful surprise with each bite.

Optionally, dust the tops with powdered sugar or drizzle with a light glaze for extra sweetness.
