Kiwi and Coconut Parfait Recipe

Line a fine sieve with 2 sheets of kitchen paper or a square of muslin. Place the sieve over a small bowl and pour in the coconut yogurt.
Refrigerate for 4 hours to allow excess moisture to drain off.
2. Prepare the Kiwi Mixture:
In a blender, purée half of the diced kiwi.
Fold this purée into the strained yogurt along with the lime zest. Discard the liquid from the bowl.
3. Assemble the Parfait:
Layer the yogurt mixture and the remaining diced kiwis in small glasses (about 150ml each).
Sprinkle a little chopped mint on top of each kiwi layer.
Finish with pomegranate seeds and a drizzle of honey, if using.
4. Serve:
Serve immediately for the best texture and freshness.
Tip: If you’re short on time, you can skip the yogurt straining step and stir all ingredients together. The parfait will still be delicious but may not hold its shape as well.
