I think this might be the top dish I've ever cooked, it's awesome.

Preheat your oven to 350°F (175°C).
In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Stir in the taco seasoning according to the packet instructions.
Remove the skillet from heat and let the mixture cool slightly.
In a large mixing bowl, combine the cooked beef, shredded cheddar cheese, ranch dressing, and chopped green onions. If you’re using black olives, mix them in as well.
Spoon the beef mixture into each of the mini phyllo dough shells, filling them generously.
Place the filled shells on a baking sheet and bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool slightly before serving.
Garnish with diced tomatoes before serving.
Variations & Tips
For a spicier kick, add some chopped jalapeños to the beef mixture. You can also substitute ground turkey or chicken for the beef if you prefer a lighter option. If you’d like a vegetarian version, consider using a meat substitute or a hearty mix of beans and corn. Try different cheeses like pepper jack for an extra tang or mix in some fresh cilantro for a burst of freshness. These bites are flexible, so feel free to get creative and tailor them to your taste.
