In a mixing bowl, combine the cream cheese and vanilla Greek yogurt. Mix well until smooth and creamy.
Drain the crushed pineapple and gently squeeze out any excess liquid. Add the crushed pineapple to the cream cheese mixture and stir until well combined.
Sprinkle the pistachio pudding mix over the cream cheese and pineapple mixture. Stir until the pudding mix is fully incorporated and the dip has a consistent green color.
Add the shredded coconut to the dip and mix well to distribute it evenly.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the dip to firm up slightly.
After chilling, give the dip a quick stir before serving to ensure the ingredients are well combined.
Serve the Pistachio Pineapple Dip with your choice of dippers such as graham crackers, pretzels, or fresh fruit slices.
