2 cups fresh peaches, peeled and diced
1/2 cup granulated sugar
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1 cup heavy cream
Directions
1. In a medium saucepan, combine the diced peaches, granulated sugar, and lemon juice.
2. Cook over medium heat, stirring occasionally, until the peaches are soft and the mixture has thickened, about 15-20 minutes.
3. Remove from heat and stir in the vanilla extract. Allow the mixture to cool completely.
4. In a separate bowl, whip the heavy cream until it forms soft peaks.
5. Gently fold the cooled peach mixture into the whipped cream until well combined.
6. Transfer the spread into a clean Mason jar and refrigerate for at least 2 hours before serving to allow the flavors to meld.
