In a small mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the crumbs are evenly coated with butter.
Make the Cheesecake Filling:
In a medium mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth.
Add the sweetened condensed milk and beat until well combined.
Stir in the freshly squeezed lemon juice and vanilla extract until fully incorporated.
Assemble the Parfaits:
Set 6 plastic 9-ounce punch cups on a counter or a cookie sheet.
