Ingredients:
2 (1 lb) New York Strip Steaks, about 1” thick each 🥩
1 teaspoon sea salt flakes 🧂
½ teaspoon cracked peppercorn 🌶️
6 tablespoons salted butter 🧈
6 sprigs fresh thyme 🌿
5 cloves garlic, whole and smashed 🧄
½ lb Yukon Gold potatoes, diced 🥔
Salt and pepper to taste 🧂🌶️
3 red chili peppers, seeded and diced 🌶️
1 red onion, diced 🧅
1 cup grape tomatoes, halved 🍅
½ cup fresh basil, chopped 🌿
½ teaspoon red pepper flakes 🌶️
2 tablespoons olive oil, divided 🫒
4-5 large eggs 🥚
Instructions:
Preheat & Prep:
Preheat your oven to 275°F (135°C). Heat a cast-iron skillet over medium-high heat. Generously season both sides of the steaks with sea salt and cracked peppercorn. Allow them to rest at room temperature for about 15 minutes.
