4 cups of fresh watermelon juice, strained
Directions
1. Begin by choosing a ripe, juicy watermelon. Cut into chunks and blend until smooth.
2. Strain the blended watermelon through a fine mesh sieve to collect about 4 cups of juice. Ensure you press out as much liquid as possible.
3. Pour the juice into a large, heavy-bottomed pot and bring to a low simmer over medium heat.
4. Continue to simmer, stirring occasionally to prevent sticking. The juice will begin to thicken and reduce. This process may take about 2 to 3 hours.
5. Once the juice has reduced to a thick, syrupy consistency and has a deep, amber color, remove from heat.
6. Let the Watermelon Honey cool completely before transferring it to a clean jar.
7. Store in the refrigerator. It will thicken further as it cools.
Variations & Tips
For a little twist, you can add a dash of cinnamon or a sprig of mint while simmering the juice. It infuses the honey with a subtle but delightful flavor. Some folks like to add a touch of lemon zest too, which brings a nice edge to the sweetness.
