Directions
In a medium bowl, mix together the cottage cheese, eggs, and vanilla extract until well combined.
In another bowl, whisk together the flour, sugar, salt, and baking powder.
Add the dry ingredients to the wet ingredients and gently fold until just combined. Be careful not to overmix.
Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
For each pancake, spoon 2-3 tablespoons of batter onto the skillet, using the back of the spoon to spread it out into a circle.
Cook for 2-3 minutes on each side or until golden brown and cooked through.
Keep the pancakes warm in a low oven (about 200°F) while you cook the remaining batter.
Serve warm with your favorite toppings and sides.

For a lactose-free version, you can use lactose-free cottage cheese. If you prefer a gluten-free option, substitute the all-purpose flour with a gluten-free blend. You can also add a handful of raisins or dried fruit to the batter for extra texture and sweetness.
