6 bone-in, skinless chicken thighs
1 large onion, sliced
2 cups of your favorite BBQ sauce
1/2 cup chicken broth
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon smoked paprika
Salt and pepper to taste
Directions
1. Start by seasoning the chicken thighs with salt, pepper, and smoked paprika.
2. In a skillet, heat the olive oil over medium-high heat. Sear the chicken thighs on each side until they are golden brown. This helps to lock in the flavor.
3. Place the sliced onions at the bottom of your slow cooker.
4. Arrange the seared chicken thighs on top of the onions.
5. In a bowl, mix together the BBQ sauce, chicken broth, and minced garlic.
6. Pour the BBQ sauce mixture over the chicken and onions in the slow cooker.
7. Cover and cook on low for 6-8 hours, or until the chicken is tender and cooked through.
8. Once cooked, remove the chicken thighs and set them on a plate. Give the sauce in the slow cooker a good stir to mix in the onions.
9. Serve the chicken thighs with a generous ladle of the BBQ onion sauce over the top.
Variations & Tips
If you have picky eaters, you can easily swap the chicken thighs for boneless, skinless chicken breasts. They cook faster and are just as delicious. For a bit more heat, add a teaspoon of chili powder or a few dashes of hot sauce to the BBQ sauce mixture. And if you like a smoky flavor, try using a hickory or mesquite BBQ sauce.
